Ingredients :
Boiled Quinoa seeds– 100 gm
Chopped carrots – 1/2cup
Chopped capsicum – 1/2 cup
Boiled green peas – 1/2 cup
Chopped coriander – 1/2 cup
Chopped green chilies – as per taste
Cumin seeds – 1/2 tsp
Mustard seeds – 1/2 tsp
Black pepper powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Salt - as per taste
Refined oil or ghee –
3 - 4 spoon
Lemon juice - 1 spoon
For garnishing – Roasted peanuts & coconut powder.
Method :
Wash the quinoa properly. Put two
cups of water and cook in pressure cooker for 3 whistle.
Let the pressure cool down completely.
Open the lid. You will see some
tails has come outside the quinoa that means quinoa is properly cooked.
Strain the excess water.
Take a pan, heat oil in it, add cumin seeds
and mustard seeds .
After
crackling add chopped carrot and capsicum.
Saute it for 2 -3 minutes. Add turmeric powder
and chopped green chillies . Let it cook for a minute.
Add boiled and strained quinoa into the sauted veggie
mixture. Mix it well. Add boiled peas and chopped coriander in it.
After mixing add salt and black pepper
powder.
Again mix it well.
Switch off the flame.
Before serving add lemon juice and garnish it
with peanuts etc.
Quinoa is very nutritious. It is
full of fiber, protein, vitamins and minerals including manganese, magnesium
and folate.
Quinoas health benefits are really
too long to list here. But the key point is that quinoa is remarkably dense in
nutrient and worth including in your
diet.
