Broken wheat or Dalia has numerous health benefits. It contains wheat bran and wheat germ, which are otherwise absent in wheat flour. Its complex and easily digestible carbs are good for people suffering from Diabetes, Heart diseases, and Obesity. Dalia is a powerful source of Fiber, Magnesium, Phosphorous, and Iron. That’s why it is being considered a superfood by Dietitians.
You can make Lapsi or Idlis from
Dalia. Today I am sharing my favorite dish of making Idlis from Dalia or
cracked wheat:
Ingredients:
Dalia/Fine Cracked Wheat – 1 cup
Curd – ½ cup
Eno salt – 1 sachet
Chopped carrot, capsicum, green coriander – ¼th cup
Black Pepper – ½ tsp
Salt- 1tsp
Oil, cumin seeds, Rai – For tempering/Tadka
Process of making Dalia
Idlis/Broken Wheat/Cracked wheat Idlis:-
Add Broken wheat/ Dalia- 1 cup In the chopper.
Run the chopper just for 30-40 seconds. It will refine the
thick wheat and help in binding the
idlis.
Do not use
Mixer-Grinder, as it will make flour out of it. If you already have the fine
granular broken wheat ( Dalia), then there is no need to refine it further in
the chopper.
Now Put the Dalia in a bowl.
Add half cup curd to it and
mix it thoroughly.
Add a little bit of water.
Cover it with a lid & keep aside for a minimum of half an hour.
After half an hour:
Broken wheat (Dalia)
will soak all the curd.
Add 1/4th cup of chopped vegetables like carrot, capsicum,
green coriander etc.
Add salt - 1 tsp
Black pepper powder- 1/2 tsp
Mix it well & add a little bit of water to make it semi
solid.
For Tempering ( Tadka):
Oil - 1 tbs
Cumin seeds - 1 tsp
Rai - 1/2 tsp. Make a Tadka of this & add it to the Dalia
mixture.
Again mix it thoroughly.
The batter should be neither thick nor thin.
Now grease all the Idli plates.
Put 2 glasses of water in idli maker & keep it on the
Gas stove to steam.
Add 1 sachet of regular fruit salt ENO to the Dalia
mixture mix again.
After adding ENO immediately pour the batter in the Idli
plates.
Cover the idli maker with the lid.
Important point:
Steaming should start in Idli maker before placing idli
plates.
Cook it on high flame (on the small burner)
After 20 minutes:
Take out all the Idli plates’
Let it cool for 10 minutes
Now you can garnish it in any style.
Cooking Time: On
flame – 20 minutes, Cooling – 10 minutes, Preparation & waiting – 40
minute. So total time is approx. – 70 minutes.
