Wheat flour cake with lots of dry fruits

Ingredients:

-         Wheat Flour(Sieved) – 8 tablespoon full

-         Salt      - pinch   

-         Baking Powder - 1tsp

-         Baking Soda   -1/2 tsp

-         Butter   -50 gm

-         Vanilla essence  - 1 tsp

-         Sweetened Condensed Milk   - 3/4 th of tin

-         Coke or any other soft drink /carbonated beverage – as per requirement in wheat flour

-         Chopped Dry Fruits,  Multicolured  Cherry etc   - ½ cup

 

Method:- First of all mix wheat flour, salt, baking powder and Soda Bicarbonate. Now sieve it thrice.

          -In a separate bowl  mix the milkmaid condensed milk with butter. Use blender for it.

          -Now add the wheat flour mixture slowly with continuous stirring. No lumps should form in the mixture. It should be a smooth one.

          -Now add the vanilla essence and then the Carbonated drink /Coke (not chilled one) at normal room temperature.

          - Now add chopped dry fruits  and stir.

- Take an Aluminium bowl , grease it with butter or oil and dust it with  Maida. Then pour the batter in it.

-Keep it in the pre-heated oven at 180 degree Celsius at convection mode for about 40 to 45 minutes.

  -  If you have no convection in your Microwave , you can cook it in your Idli maker .

For it just pre-heat the Idli maker . Put a net in it. Now put the Aluminium bowl on it  and cover the Idli maker with a lid. Cook this at a low flame for about 50 minutes to one hour. Your  delicious  yummy cake is ready. Let it cool for 15 minutes.Now You can cut  and garnish with fruits or whipped cream.

Note : To maintain the nutritional value I have prepared this cake with wheat flour and dry fruits. You can try with  Maida ( Fine ground wheat) also.
