Tips for yummy and crunchy homemade pakoras
1)If you are using 1 cup of besan for pakoras then also add 1/4th cup of rice flour in this.
2)Always fry in mustard oil (Oil should be neither too hot nor too cold)
3)Add 1 tbs of lemon juice in the batter.
4)Add 1-2 tbs of refined oil in the besan mixture.
5)Add fresh and crushed ginger and garlic in the batter.
6)Add salt, chili powder, turmeric powder, carom seeds, coriander powder and also little bit whole coriander seeds in the batter.
7)Add little bit dry kasoori methi.
8)Add a pinch of meetha soda in the batter.
9)Let keep the mixture aside for 10-15 minutes.
10)The mixture should be neither thick nor thin.
11)By these guidelines, pakora will turn out crunchy but still, you want more crunchiness then fry it two times. First time fry the pakoras for a short time, keep them aside when you want to serve it then fry it again properly, definitely your pakoras will turn out more crunchy.
12)If you love spicy food then you can add chopped green chilly in the batter, this will enhance the flavor of pakoras.
