It is a North Indian drink. In summer it prevents us from heat stroke and epistaxis ( Bleeding from nose) . It is a very refreshing drink during summer and also acts as a body coolant . It is also a special drink to be served on special days & festive occasions like Holi , Diwali etc. Very easy to make and full of nutrition.
How to make
Thandai:-
Ingredients :
Milk (Full Cream) – ½ liter
Sugar - 2 table spoon
Saffron – 6 to 8 strands
Rose Essence – 2 drops ( Not necessary)
Material for grinding
:-
Almonds ( Blanched & peeled) – 20
Soaked Poppy Seeds – 1 tea spoon
Soaked Fennel Seeds – 1 tea spoon
Cardamom Powder – ¼ tea spoon
Pepper Corn – 10 pieces
For garnishing-
Few fine chopped pistachios and few saffron strands.
Recipe : Boil the milk and add 6-8 strands of saffron in it. It is better to soak saffron in little lukewarm milk for some time , before adding it to the boiled milk. This will give a good flavor and tint to the Thandai. Now add sugar. Make a paste of all grinding material as above. Add this paste in boiling milk . Now switch off the gas burner and set aside for 1 hour. After 1 hour sieve the milk and add chopped pistachios and crushed ice before serving.
