Yes, potatoes are safe to eat even after they have sprouted so long as they are still firm to touch and they don't look too wrinkly and shriveled. You can simply remove the sprouts from a firm potato and continue with your dish.

Q: When not to eat a sprouted potato?

A: A wrinkled and shriveled sprouted potato will have lost most of its nutrients & it would not be palatable. Also, solamin and glycoalkaloids are present in the eyes, sprout and skin of the potato and this will lead to digestive problems.

Sprouts happen when your potato is exposed to an environment that is too warm or too bright.

A: 1) Keep potatoes in a cool and dry place.
2) Keep them away from onions, which will cause potatoes to sprout faster.
